Indian Infused Chicken & Mash
Ingredients
Chicken breasts
2-3 slices of bacon per breast
Cheese (grated)
Garlic & Herb soft cheese
Butter
Garlic Butter
Potatoes
Mint & Yoghurt Sauce
Scotch Bonnet Sauce
Mango & Apricot chutney
Salt & Pepper
Instructions
1. Preheat oven to 180 °C.
2. Peel your potatoes.
3. Bring water to a simmer adding salt, pepper, 2 tbsp butter, 1 tbsp garlic butter.
4. Add potatoes and boil for 40 minutes.
5. Slice your chicken breast down the middle without cutting through.
6. Add ¼ of a tsp of the garlic & herb soft cheese into the slice.
7. Fill the rest of the space with mango & apricot chutney.
8. Wrap the chicken with bacon until covered.
9. Glaze the top with the scotch bonnet sauce (add as much or as little as you would like).
10. Place in the oven for 25 minutes.
11. When the potatoes are fully boiled, drain the water off and mash thoroughly.
12. Add salt, pepper, milk, butter, mint & yoghurt sauce to taste.
13. Place the mash into a tray that can go into the oven & lightly sprinkle with grated cheese.
14. Pop that into the oven at 180 °C for 10 minutes or until crispy.
15. Plate up and enjoy!
